Mmmmm Mmmmm Monday! Gluten-Free, Dairy-Free Meatloaf!

Gluten-Free, Dairy-Free, DEEEElicious Meatloaf!

For many people, the word “meatloaf” brings up horrible visions of scary lumps of meat, or scary looking men from the 80s.  Either way, it does not make taste buds scream with joy and instead usually sends taste buds running, screaming in horror.  But NO More!!  This Meatloaf is Amazeballs.  Sooooo gooooood.  My sweet little girls and I all have to eat gluten-free and dairy-free and I also try to limit our sugar intake.  This recipe meets those requirements and is so delicious, your family will hold up their swaying cell phone flashlights as they chant “Encore!”

Ingredients:

  • 3 eggs
  • 1 C coconut milk (full fat from the can, This is usually my go-to brand)
  • 1 T dried onions
  • 3/4 t salt
  • sprinkle layer of Mrs. Dash Tomato Basil Garlic on top of the aforementioned ingredients and whisk all together (I can never find this at Walmart, but Target usually has it.)
  • 3/4 C glutino table cracker crumbs (about 6.5-7 crackers smashed. I usually achieve this by putting the crackers in a thick ziploc bag, throwing said bag on the ground and having dance party USA on top of the bag)
  • 2 lbs ground beef (We actually have a store that carries grass-fed bison that I prefer to use, but use whatever you like that resembles ground beef.)
Directions:
(Brace yourself, this gets a little complicated…. Haha, Just Kidding! It’s one of the EASIEST meals ever to make.  The hardest part is smooshing it into a nice flat shape, but that might be because my long fingers are a bit wonky.)
Squish all together and put into glass baking dish that’s been sprayed with oil. Cover with foil.
Bake for 350º for 1 hr
Sauce:
1/3 C ketchup (My girls love Xyla brand ketchup and I love that it’s sugar-free!)
1/3 t nutmeg
1 T xylitol (I also use Xyla brand xylitol for this.  It’s made from North American Birch trees, instead of corn or mushrooms like many other brands.)
1 T pure maple syrup
small amt of yellow mustard (to taste)
Combine sauce ingredients, pour over top of meatloaf, and cook an additional 15 min uncovered. If your family is sauce-obsessed like mine, you may want to double this sauce recipe.  Then eat it and love your life.  Serve with steamed veggies, or your favorite mashed root veggie.  Enjoy!!
